Chef Thomas Ciszak of Chakra in Paramus Introduces Bourbon

Thomas Ciszak, known to New Jersey diners behind Morristown’s Blue Morel Restaurant and Wine Bar (Website) and owner of Chakra in Paramus (Website), has created TC SELECT Bourbon in time for the holidays.

TC SELECT Bourbon was conceived when Chef Ciszak, working in his capacity as VP of Island Hospitality Management, was developing Toasted Barrel in Savannah, Georgia, a Bourbon Bar and grilled cheese concept. While spending time in Kentucky sampling spirits, he became captivated by the bourbon-making process. “My approach to making this bourbon was a culinary one. Different types and ‘toast’ levels inject different flavors and nuances to the Bourbon. It’s like seasoning the Bourbon, adding brown spice, molasses and even white pepper flavor,” Ciszak noted.

TC Bourbon was created by Chef Ciszak in conjunction with Maker’s Mark. It was aged for five years in American white oak, and further aged with TC’S signature blend of baked American oak, Seared French Cuvee, roasted French mocha and toasted French spice oak staves.

Just one barrel was produced, so availability is highly limited (only 240 bottles). In New Jersey it is for sale exclusively at Chef Ciszak’s NJ-based TC Restaurant Group properties, Blue Morel and Chakra, and retails for $69.99 for a 750ml bottle. In time for unique year-end gift giving, TC Bourbon is packaged with a pair of spherical ice molds.

Of course, it’ll be behind the bar at these locations too, Chef Ciszak recommends enjoying it with one large cube, neat, or in his version of a Boulevardier.
