Hudson 303 Sport Cafe in Tappan Adds Neapolitan Pizza

Hudson 303 Sport Cafe, the restaurant and bar inside driving range Tappan Golf Center, has added Neapolitan pizza after spending many hours fine tuning recipes and conducting endless taste tests.

This “passion project” for owner William Cho, who trained under champion pizzaiolo Roberto Caporuscio (Kesté, Don Antonio), begins with a Forza Forni rotating deck oven imported from Italy — with wood as the main fuel source  — and a cooking temp of approximately 825-850 degrees. Bake times are around 90 to 100 seconds per pie, which gives them a “crispy char and texture”.

Dough is crafted with a double fermented Neapolitan New York “hybrid blend”, a mix of Caputo Americana 00 and Caputo Tipo 1 flours. Imported San Marzano tomatoes are used for the red sauce and mozzarella is made fresh in house.

The regular pizza menu (View Menu) will offer four to six pies in regular rotation — from the traditional Margherita to choices like Philly Cheesesteak and Korean BBQ (marinated Korean beef, kimchi, scallions), with special pies planned regularly based on seasonal flavors.

Hudson 303 is open six days a week (closed Mondays).
