Empanada Mania, the empanada-specific restaurant in Bergenfield, is making the move to a mobile concept as a food truck. Owner Galo Grijalva has decided to raise the funds to convert a recently purchased school bus through crowdfunding site Kickstarter — with the campaign starting today. With the $15,000 he hopes to raise, Grijalva plans to install stainless steel panels plus add electrical, plumbing,  cooking equipment, fire suppression, exhaust hood and fan — the truck will also need to be painted and wrapped.

Rewards for the campaign include: empanadas, t shirts, hats and more. And if any funds are leftover, they will be applied towards the backer rewards, Kickstarter costs, taxes, and the inevitable Empanada Patty Wagon launch party.
