Spuntino Wine Bar & Italian Tapas has created a menu highlighting radicchio for its Winter Flower Celebration, available January 12 – 25, 2015 at its location in the Clifton Commons in Clifton, NJ.

Guests are invited to enjoy a special menu prepared by Chef Josh Bernstein, featuring the iconic radicchio, which has a rich history in the Veneto region of northern Italy. The tasting menu is available for $45 per person, or $65 including wine pairings.

· RADICCHIO BRUSCHETTA – Sautéed, pickled and soffritto, truffle fonduta. Paired with a Zardetto Brut Prosecco.

· RISOTTO DI RADICCHIO – Grilled jumbo shrimp, Vialone Nano rice, fried leeks. Paired with a 2013 Der Pollerhof Gruner Veltliner.

· BLACK BASS – Radicchio salmoriglio, braised fennel, olive tapenade. Paired with a 2013 Filippi Castelcerino Soave Classico.

· PAN ROASTED DUCK – Cahrred Treviso Tardivo in a cherry-balsamic reduction. Paired with a 2010 Allegrini ‘Palazzo della Torre’ Baby Amarone.

· INSALATA DI TRE RADICCHIOS – Pork belly lardons, pistachio, quail egg in a lemon-brown butter vinaigrette. Paired with a 2012 Bertani Valpolicella.
