The Butcher & The Chef ― S1: Episode 004

The Butcher and The Chef goes offsite to Kings in Hillsdale for a trip to the seafood department and some time with their team. From soft shell crabs, cod, swordfish, bronzini and clams ― Vitale learns some tips on what to look for with each fish.

Vitale also inquires about why Kings stands out with GM Gerry Straub ― since he uses them as his exclusive seafood supplier for Caffe Anello. Straub explains how Kings insists on buying what they call “Top Of The Catch” , the most recently caught and freshest fish from the “top” of the day’s bounty.

Vitale finishes up with a quick run through some of the aisles – grabbing a few other ingredients for dinner service that night at Caffe Anello.
