L’Arte della Pasticceria in Ramsey begins selling its homemade gelato for the first time today. Veteran pastry chef and co-owner Vicki Wells, who took over the reins of the shop in late January, is looking to share their “Sicilian-style” gelato with the area.

Wells explained that American ice cream has evolved to include more fat (among other ingredients), which masks flavor. In Italy, they even use little or no egg in their frozen treat. The gelato at L’Arte follows the same edict, with no egg and no stabilizers while making the product in extremely small batches  ― using an imported machine from Milan. The main ingredients (before the flavorings) simply include fresh local milk, cream, and sugar.

Flavors. Wells revealed six would be available at the beginning. This includes Pistachio, Vanilla, Stracciatella (chocolate chip), Gianduja (hazelnut milk chocolate), Delizia di limone (lemon with almond praline), Salted Caramel and Strawberry Balsamic.
