Stickey’s BBQ Hillsdale Signals Return to Bergen County

When we last posted about the upcoming Stickey’s BBQ in Hillsdale a few weeks ago, details were slim. Now we’ve gotten some official specs from owner Larry Hage regarding his Texas-style BBQ joint headed for a winter opening. Construction has begun on the new BYOB restaurant, with 80-90 seats, a number of TVs and a complete “barn” motif complete with saddles and other touches to match the theme. All the furnishings (tables, etc) are being custom built including portable ice coolers that roll up to your table for keeping drinks chilled.

Hage, who was pit-certified at 21, and his menu should be familiar to those who frequented the old Stickey’s back in Teaneck almost a decade ago. All the smoked meats (beef ribs, pork ribs, brisket, pulled pork) will be smoked and cured for 8-16 hours in a custom-built 550lb smoker using white oak and cherry wood. All finishing will be done out in the dining room right in front of diners in a custom open pit. Other (non-smoked) meats will be cooked in the pit including beef, turkey and ham. He was particularly proud to mention the only gas cooking in the place will be for the deep fryers, everything else will be cooked using wood.

The four house sauces are traditional, mojo (which is hot & spicy), Cornell (a garlic herb blend) and raspberry bbq. Traditional sides like collard greens, mac n cheese and others will round out the food menu. A number of deep fried treats like Oreos and Snickers bar will be served for an indulgent dessert.

Hage was hesitant to give an opening date at this point, but promises construction will be finished in a matter of “weeks”.
