Italian Dinner at Chakra in Paramus on November 6th
Inspired by his recent trip to Italy, Chef Thomas Ciszak will be serving a four-course menu paired with white Italian wines at Chakra in Paramus on Thursday, November 6 at 6:30pm.
The menu will take guests around Italy from coastal Tuscany to rustic Piedmont and to undiscovered gems such as Le Marche and Friuli, pairing each region’s wine with Chef Ciszak’s interpretations of Italian fare. The dishes will be contemporary but reflect the culinary traditions of the different regions where the featured wines come from. For example, Ciszak travels to Tuscany’s coast for Giant Shrimp with royal trumpet mushrooms paired with a white Palistorti di Valgiano (vermentino, trebbiano, malvasia, chardonnay & sauvignon blanc) from biodynamic producer Tenuta Di Valgiano. Pork Belly Confit is accompanied by chestnuts and polenta, both typical of the northern region of Piedmont, and paired with wine from Oddero (riesling-chardonnay blend), one of the region’s best producers. Friuli’s unique Montasio cheese will get a seasonal twist with quince and fig-walnut crostini, a natural pairing with the local Friulano grape.
