A new pizzeria specializing in crispy sourdough pizza is preparing to open in Ridgewood.

Robby’s Pizza is coming to 102 North Maple Avenue, bringing a concept inspired by the simplicity of neighborhood pizza shops from the 1980s.

The restaurant will focus on naturally leavened sourdough pizza made with quality ingredients and without seed oils, emphasizing a crispy crust.

The owners are also taking an old-school approach to service, with no phone orders and customers able to walk in or place orders online.

The pizzeria plans to open daily at noon and serve pizza until sold out.

Construction and interior work have been underway, with the business sharing progress on social media ahead of a planned November opening.
