A new waterfront restaurant from the team behind Blu on the Hudson has officially opened in Edgewater.

COV is now welcoming guests at 115 River Road, taking over the former Pier 115 waterfront property along the Hudson River.

The restaurant is the latest concept from Blu Hospitality Group, whose portfolio also includes Blu on the Hudson in Weehawken and Blu Grotto in Livingston.

The menu showcases a curated chilled bar and is designed for sharing with selections of seafood, pastas, grilled specialties, and more.

Beverage Director Jeremy LeBlanche’s “innovative and interactive” cocktails round off the experience with “striking presentations and push the boundaries with creative flair”.

The restaurant describes itself as an upscale waterfront concept featuring fresh seafood, panoramic views of the Hudson River and the New York City skyline, and a coastal-inspired atmosphere designed to feel both elegant and inviting.

COV is currently open Wednesday through Sunday, with dinner service and late-night hours on Fridays and Saturdays.
