There’s some new details on Canton Rodeo, the upcoming Hong Kong-style BBQ concept headed to Bergen Town Center in Paramus.

The restaurant is taking over the former Sticky’s Finger Joint space and is expected to open this summer.

Canton Rodeo will focus on “legendary, slow roasted Hong Kong BBQ,” pairing traditional Cantonese barbecue techniques with modern flavors and playful branding-inspired by the cuisine of Hong Kong and Chinatowns around the world.

The business is co-founded by chef Connie Chung (Eleven Madison Park, Milu), Fung Lam (Hillstone Restaurant Group, Panda Express) and Matthew Kann (investor in Banza, Cocojune + Playa Bowls).

Early previews of the menu showcase dishes including glazed roast duck, char siu chicken, soy sauce chicken, charred scallion lo mein, roasted cabbage, fried rice, and house-made sauces.

The concept leans into colorful Hong Kong-inspired visuals mixed with western rodeo themes, using phrases like “Howdy From Hong Kong” and “The Tastiest Rodeo in Town.”

Canton Rodeo is currently targeting a Summer 2026 debut at Bergen Town Center.

No official opening date has been announced yet.
