California-Inspired Eatery Opening Next Month in Bergen

A growing fast-casual concept is expanding into Bergen County.

Alfalfa is preparing to open a new location in Edgewater at 725 River Road, joining the Edgewater Harbor shopping center.

The brand is known for a menu centered around fresh, locally sourced ingredients, with offerings that include salads, soups, breakfast burritos, and house-made doughnuts.

Founded by a group of friends who grew up in Hoboken, Alfalfa began as a farmers market concept before evolving into a pop-up and eventually opening its first permanent storefront in 2019. The concept was built around creating accessible, high-quality food while emphasizing balance, community, and connection.

Since then, the brand has expanded with locations in Hoboken, Jersey City, and California.

The upcoming Edgewater location will mark Alfalfa’s first storefront in Bergen County, continuing its steady regional growth.

While an exact opening date has not been confirmed, the team recently shared that they are targeting a May 2026 opening.
