A new concept called Gimjang has opened in Northvale at 140 Paris Avenue.

The business is described as “celebrating local kimchi artisans,” with a focus on small-batch kimchi and seasonal lunch offerings rooted in tradition.

According to the team, “every jar we make begins with the heart of gimjang: families gathering, hands working together, recipes passed down with care,” with the project aiming to highlight storytelling and individual artisan voices.

Gimjang also notes that its menu and approach are shaped by heritage, explaining that dishes come from “hands that have learned from mothers, grandmothers, and winters long past,” tying food preparation closely to memory and culture.

The interior reflects this philosophy as well, with inspiration drawn from traditional Korean palace architecture and materials chosen to “honor timeless values.”

It’s currently open five days a week.
