Signs are up in downtown Westwood for a new eatery that’s coming soon.

Chef Michael Merida is bringing his culinary talents to town with Craft Taco Co.

He currently operates Rockin’ Roots in Hillsdale (Website) and Beat Bobby Flay (Read Article) on an episode in early 2020.

The menu will take from all his travels around the world — turning those flavors (Korean, Indian, Southern) into a taco.

There is also an adjacent space called The Tasting Room, which will includes events, tasting menus and more.

Plans eventually include a taco omakase, which would feature a seven course taco menu.

He spent time earlier in his career at highly regarded establishments like El Bulli in Spain and Le Bernardin in Manhattan.

Merida hopes to open sometime later this year.
