Opening Alert: Tojos Restaurant, Ho-Ho-Kus, NJ

Tojo’s Restaurant, the sister restaurant to Tojo’s Kitchen in Paramus, has opened in Ho-Ho-Kus.

Tojo-san graduated with a law degree in Meiji Gakuin University and moved from Japan to the US about 9 years ago. He began doing marketing for a sake brewery in Chiba, Japan and eventually opened his first ramen store at Garden State Plaza.

Described as more “contemporary style” than the first shop, the menu includes ramen, donburi, appetizers, and some “authentic drinks”.

The ramen takes anywhere from 60-72 hours to make — from boiling the pork bones, filtering the bones out, taking the oil out from the pot and turning it into a broth. Tojo claims they are only ramen restaurant in Bergen County that boils their own broth.

They will be serving lunch and dinner — outdoor dining may be available during the summertime — in the 500 square foot space with approximately 25 seats.
