Nazca, a cevicheria and bar, has opened in Dumont.

It comes from Habana Casual Cafe (Hackensack, New Milford) owner Benito Rivero, who studied at the Institute of Culinary Education and worked at places like Craftsteak and Latour before opening in Hackensack.

The menu (View Menu) is “modern Peruvian food” with an emphasis on Nikkei and Chifa. Nikkei is a Japanese-Peruvian style that’s currently hot around the world while Chifa is a fusion of Chinese and Peruvian eats, also found in areas like Ecuador and Bolivia.

There is a liquor license and the bar will focus on tiki-inspired cocktails, plus they also offer sangria by the pitcher, wine, and beer.
