Fall Menu Now Available at Due in Ridgewood


Award winning executive chef Adam Weiss has put the finishing touches on his autumn lunch (View Menu) and dinner (View Menu) menus for “due” (the corner of East Ridgewood Ave. and South Broad St.).  Chef Weiss’ autumn menus showcase modern seasonal dishes that utilize many autumn ingredients such as apples, butternut squash, cranberries, pumpkin and traditional fall spices.

The lunch menu embraces these ingredients and pulls them all together in fall favorites such as Tuscan kale Waldorf salad.  Chef Weiss combines granny smith apples with Maytag blue cheese, dried cranberries, toasted walnuts and serves it with a warmed apple cider vinaigrette.  Also appearing on the lunch menu at “due” is an autumn roasted spaghetti squash “puttanesca” that combines roasted tomatoes, cauliflower, white beans and brussel sprout leaves.

Chef Weiss’s dinner menu is just as creative.  The pan-roasted rohan duck breast is served with a butternut squash bread pudding, apple-cranberry chutney and a maple-white balsamic duck jus.  The braised beef short ribs also take on a seasonal flavor.   Chef Weiss’ short ribs are also spiced with apple cider and served them with red cabbage, crème fraiche whipped potatoes, brussel sprouts in a cider mustard veal jus.
