NYC Restauranteurs Bringing Fast Casual Concept to New Jersey

The Gyro Project is a new elevated Greek fast casual concept curated by George Tenedios, founder of Manhattan’s salad chain fresh&co and Spiro Kokkosis, owner of several Times Square staples such as Majestic Deli, Premier Deli, and The Times Eatery.

TGP will focus on a modern twist to authentic Greek street food, such as house-made gyros, souvlaki, grain bowls, salads, rotisserie meats & poultry, all using clean ingredients, with several vegan options as well. Some additional call-out dishes will include sesame crusted baked feta, honey-drizzled saganaki cheese, and Greek-style lamb chops.

They’ll also be highlighting some traditional Greek desserts, such as baklava and loukoumades (aka Greek donuts) with drizzled Nutella and imported Greek honey.


Having grown up as Greek-Americans in the restaurant business, The Gyro Project is George and Spiro’s latest concept to highlight what their version of modern Greek food looks like, but as a fast casual concept.

George and Spiro have plans to expand the brand across the North Jersey area and are actively looking for a second and a third location.
