Local pitmaster (and food truck popup vet) Mario Chape has opened a retail outlet of his Big Papa Smokem brand in Bogota.

Chape is doing a “Jersey-style” bbq joint – mixing different things that’s he’s learned along with his Cuban roots – featuring many of the items you’d see at his popups like brisket, ribs and pulled pork. The new space will allow him to expand his offerings like papa rellenas (pulled pork stuffed potato balls) and fresh pork rinds.

The shop is open six days (closed Sundays) beginning at 11:00am according to their Facebook Page.
