Cafe Matisse in Rutherford Rolls Out Spring Menu

Cafe Matisse, the venerable Bergen County dining institution, has launched their spring menu.

As always overseen by Chef Peter Loria — who is also handling pastry chef duties  — the menu (View Menu) aims to showcase colors for the spring, while offering flavor combinations that are thought out.

While Loria believes there is something for everyone (shrimp, big eye tuna, short ribs), he also went against the grain by bringing in venison — something normally seen in the colder weather – using cherries and plums from the season. He’s also quite proud of his burger — layered with ancho‎ chili red onion jam, Gorgonzola mousse, short ribs and a side of wings –  which was recently named “Bergen’s Most Gourmet Burger” by 201 Magazine.

Matisse still offering tasting menus of three, four or five courses with one dessert — savory options are around nine different selections at the moment along with five distinct desserts.

In addition to the warmer weather bring a new menu, their garden will also be opening soon. Cafe Matisse is open five days a week (closed Monday-Tuesday) for dinner only.
