Recap: Chef’s Table at WannaBee Chef in Cresskill, NJ

We had the opportunity to take part in the Chef’s Table at WannaBee Chef on a cool Saturday night in October. Chef Rama from WannaBee Chef promised a night of culinary delight with a taste of the fall. From the invite:

Join Chef Rama as she stimulates your senses for an unique evening highlighting fall’s freshest bounty. This culinary experience allows the guests to watch and interact with the chef as she creates some of her favorite dishes.  This is the first dinner in Chef’s Table three part series.

Chef Rama did not disappoint the crowd. Each course certainly had something interesting to offer. The flavors of the season in each dish really hit the spot (as did the BYOB from the crowd). Below are photos from each course served that night.


Crostini with Fig and Cheese.
A nice “pre-course” to our 6 course meal.

Late Harvest Corn Bisque. Roasted Apple Croutons.
A huge win. Very rich and filling with the apple giving some nice added flavor.

Warm Pumpkin Salad. Polenta. Arugula. Candied Pumpkin Seeds.
You can’t see the polenta cake underneath all the arugula here. We’re not polenta lovers but thoroughly enjoyed this.

Beet & Ricotta Ravioli. Poppy Seed Butter.
Interesting flavor, reminded us of how much we do like beets. Even had the opportunity to have a second helping.

Olive Oil Poached Shrimp. Risotto Cake. Tomato. Saffron Broth.
Excellent. We had been anticipating this course all night. Wish there were more shrimp, but we acknowledge we needed to save room for two more courses.

Braised Lamb. Fig Thyme Jam. Quinoa Almond Pilaf.
Nothing like lamb and Chef Rama’s favorite (Quinoa) to finish off the meal before dessert.

Pear & Dried Cranberry Clafouti. Vanilla Cream Anglaise.
The edges of the clafouti were extremely crispy and well done. They will remain in our dreams for some time.

Conclusion: One of the best tasting menus we’ve had in some time and we are definitely looking forward to the next Chef’s Table. We highy recommend grabbing a ticket before the sell out (there is limited space at this venue). As a nice touch we even got a bag of granola to take home for breakfast the next day (How Danny Meyer!).
