Mercato Bringing Roman-Style Pizza to Tappan

In their “continuing mission to create delicious, healthy, everyday food locally”, ownership of The 9W Market (Palisades) and The Filling Station (Palisades, West Haverstraw) adding a new pizza concept to their brand.

It’s replacing pizza tenant Lilo at Tappan Plaza, which closed it’s doors sometime last year. The shopping center itself looks to be shaping up if the rumored Lidl supermarket does indeed replace the long-shuttered Bon Fayr BBQ (Read Article).

The name is Mercato, Italian for market, and as their tag line “Roman Pizza Works” (in the signage already hoisted at the plaza) suggests, they will be serving all 4 types of Roman-style pizza.

Ownership spent time in Rome trying the different varieties, talking to various flour and oven companies. They discovered “some of the most unique and best pizzas” they’ve ever had, so they’ve decided to bring some of that back home.

They will be making a 80% hydration dough using a mix of ancient wheat, rice and soy flour. It will be fermented for a minimum of 72 hours – which they claim will create a very light, airy, crisp and complex-flavored sourdough crust plus offer two-thirds less carbs and gluten then your typical pizza. All ingredients will be sourced locally as much as possible.

Pies will be made in the dining area behind the bar using two different ovens – one wood-burning and one computer-controlled electric deck oven. The styles are as follows:

Pinsa – light flatbread like
Classic al taglio – 24 inch pan
Tonda – thin crust round
Al Pala – 30 inch long free form

Due to the current public health situation, ownership says that if anybody would like to try some of this product, they are currently serving Pinsas and Taglio pieces at The 9W Market.
