Trio Ramen Azuma, a new ramen restaurant from Soba Azuma (Fort Lee) and Ramen Azuma (Englewood), has opened in Fort Lee.
The menu features chicken paitan, the chicken broth cousin of the popular tonkotsu (pork) broth-based ramen (served in Englewood). This is along with their chashu (pork belly) and other dishes like dumplings and buns. Noodles are made in-house just like their Englewood cousin,
Customers were asking for chicken in Englewood, so ownership decided to open a dedicated shop to that style of broth.
