DVine Bar in Sparkill has added an artisanal cocktail program designed to highlight local & seasonal ingredients.

When GM Monika Riley began her quest to build their mixology choices, she was curious to learn as much as possible — realizing there was a broad world of liquor she would have to add to her knowledge. So she sought out artisanal and local spirits, aiming for esoteric selections — much like their wine list — while remaining value driven.

A few of her finds are Mizu Shochu, a Japanese liquor distilled from barley and black koji rice. It has notes of lychee, grass, mushrooms and vanilla and makes for a cocktail with egg white, lemongrass and Espirit de June — which itself is made from the vine flowers of Ugni Blanc, Merlot and Cabernet and then infused with a neutral grape spirit.

While their Executive chef Christopher Holland is known for taking familiar dishes and turning them on their heads (View Dinner Menu), she’s aimed for something similar with the cocktails. For a classic like an Old Fashioned, she came up with the Old Broad: they take muddled orange with sugar in the raw, Bitterman’s Burlesque Bitters and top it off with Four Roses Bourbon.

DVine Bar is open Tuesdays thru Saturdays for dinner. Reservations can be made via OpenTable or by phone at (845) 359-2141.
