Crumb Cake Creations in Wyckoff Launches Gluten-Free Crumb Cake
Crumb Cake Creations, the crumb cake specialists in Wyckoff (they bake in Hawthorne), have been tweaking away in their test kitchens and have revealed their latest creation: a gluten-free New York-style crumb cake. The business, which originally sold to caterers and party planners, has been also selling direct to consumers via their website.
While not certified gluten-free, the cake is made with all gluten-free ingredients, plus owner Michael Franco explained that they’ve purchased a new mixer to be used exclusively with the gluten-free cakes. The cake keeps with the Crumb Cake Creations style ―the base cake is 3/4 of an inch, the crumb layer is 2 and 1/2 inches ― but was crafted with a combo of rice and garbanzo bean flour. This gives them a moist base cake and retains the taste they are looking for according to Franco.
