Mitsuwa Bluefin Tuna Cutting Festival
The annual Bluefin tuna filleting at Mitsuwa features a 500lb tuna showcasing the techniques used by the masters of this Japanese tradition. The fish master’s technique of a single sweep – who thoroughly understands the anatomy of the “monster” – for this once-a-year event as the enormous fish is cut and made ready for sashimi and sushi. It is rare to see a performance like this, even in Japan.
